Parmesan Baked Potato Halves

Description

These potatoes will quickly become a family favorite, and they are great for guests, as well. By cooking them cut side down, they get a nicely browned Parmesan crust, which is what makes them so special.

Ingredients

  • 6 medium to long baking potatoes, scrubbed and cut in half
  • 1/4 c. butter
  • 1/2-3/4 c. grated Parmesan cheese
  • garlic powder, to taste
  • seasonings, like rosemary, thyme basil, oregano, to taste
  • sour cream or Ranch dressing, for dipping
  • chives, chopped, if desired

Steps

  1. Preheat oven to 400 degrees.
  2. Wash and pat potatoes dry with paper towels. Cut potatoes into halves, the long way.
  3. Melt butter; pour into a 9 x 13 inch baking pan that has been lined with aluminum foil; spread evenly across the bottom. Generously sprinkle Parmesan cheese and desired seasonings over the butter.
