Description

This coffee cake is delicious, moist and is packed with yummy blueberries. It has a sweet crumb topping to die for. Serve it for breakfast, dessert or for a quick snack.

Ingredients

• 2 c. all-purpose flour
• 1 1/2 t. baking powder
• 1/2 t. salt
• 1 stick unsalted butter, softened
• 1 c. sugar
• 2 large eggs
• 2 t. vanilla extract
• 1/2 c. whole milk
• 1 T. lemon zest
• 2 c. blueberries, fresh or frozen
• crumb topping:
• 1/2 c. sugar
• 1/4 c. all-purpose flour
• 3 T. butter, melted
• icing:
• 1 c. powdered sugar
• 1 - 2 T. freshly squeezed lemon juice

Steps

1. Preheat oven to 350 degrees. Spray a 9 inch springform pan with non-stick cooking spray; sprinkle with flour.
2. Prepare crumb topping.
3. In a small bowl, combine sugar, flour, and butter. Mix until mixture is crumbly. Set aside.
