This delicious shortbread bar is a cross between Pecan Sandies and shortbread cookies. They are easy to make and even more wonderful to eat.
1 c. butter, softened
1 c. sugar
1 egg
2 c. all-purpose flour
1 t. cinnamon
1/2 t. salt
1 t. vanilla
1 c. chopped pecans, divided
Preheat oven to 350 degrees. Spray the bottom of 13 x 9 inch pan with non-stick cooking spray.
In a large bowl, combine butter and sugar; beat until light and fluffy; beat in egg.
Add flour, cinnamon, salt and vanilla; mix well. Stir in 1/2 c. pecans.
Press dough in the bottom of the pan. Sprinkle remaining 1/2 c. pecans over dough; press in lightly.
Bake 30 - 35 minutes or until lightly browned. Cool completely.
Cut into bars. Serve.
