Description
This salad is quick and simple to make. It's satisfying, fresh, light and delicious. Make it a summer staple with fresh tomatoes, but it can be made anytime of the year. It is wonderful the first day and even better the second, if there is any left!
Ingredients
1 lb. Roma tomatoes
1 English cucumber
½ medium red onion
2 avocados
2 T. extra virgin olive oil or sunflower oil
juice from 1 medium lemon, about 2 T.
1/2 bunch cilantro, chopped
1 t. sea salt or ¾ t. table salt
⅛ t. freshly ground black pepper

Peel the onion. Wash tomatoes, cucumber and avocados. Chop the tomatoes and cilantro. Slice the cucumber and red onion. Remove the pits and dice the avocados.
Place tomatoes, cucumber, red onion, avocado, and cilantro into a large salad bowl.
Drizzle with olive oil and lemon juice. Toss gently to combine.
Just before serving, toss with salt and black pepper.
