Ingredients

• 5 lb. watermelon, cold
• 1 Vidalia, other sweet onion, or red onion
• 1/4 c. red wine vinegar
• salt, to taste
• freshly gound black pepper, to taste
• 1/2 c. extra-virgin olive oil
• 2 T. chopped fresh mint
• 4 oz. feta cheese, crumbled
• 6 whole mint sprigs

Steps

1. Slice open the watermelon; cut the flesh from the watermelon; cut into bite sized pieces; remove/discard the seeds; set aside. Peel onion; slice into thin rings.
2. In a small bowl, combine vinegar, salt, and pepper; whisk until salt is dissolved; slowly whisk in olive oil, a few drops at a time. Add in the chopped mint; taste; adjust seasonings.
3. In a large bowl, combine the watermelon, onion, and feta. Pour dressing over the watermelon mixture; toss gently until everything is coated and mixed. Garnish with mint sprigs.
