Description
This salad is a great one to serve in in the summer. It's easy to make, delicious and a beautiful salad to serve to guests. Substitute any berries or summer fruit that you prefer, like raspberries or blackberries. Add a little protein, crunch and more yum
Ingredients
- Dressing:
- 1 c. strawberries
- 1/4 c. balsamic vinegar
- 1/4 c. extra-virgin olive oil
- 1 T. Dijon mustard
- 1 T. honey or Agave nectar
- 1 clove garlic, minced
- 1/4 t. salt
- 1/4 t. pepper
- Salad:
- 5 oz. baby spinach
- 1 c. strawberries, sliced
- 1/2 c. blueberries
- 1/2 red onion, thinly sliced
- 1 sweet apple, cored, halved, and thinly sliced
- 1 c. candied walnuts or pecans, chopped
- 1/2 cup crumbled Gorgonzola or Feta cheese
Steps
- Wash strawberries, blueberries, spinach, and apple. Drain well.
- Dressing:
- Push a straw through the strawberries from the bottom tip to the green top to remove the hull, or cut it off with a knife. Discard hull. Add the remaining dressing ingredients; in a blender or food processor, blend until smooth; refrigerate.
