Description
Fresh corn on the cob is always a special summertime dish, but take it to a new high with your choice of 3 easy to make different flavored butters. Sprinkle with a little freshly grated Parmesan cheese and you will be in Heaven!
Ingredients
- 8 ears corn, in the husks
- BBQ Butter:
- 2 T. oil
- 1/2 small onion, chopped or grated
- 2 cloves garlic, chopped
- 2 t. paprika
- 1/2 t. cayenne powder
- 1 t. toasted cumin seeds
- 1 T. chili powder
- 1/2 c. water
- 1 1/2 sticks unsalted butter, slightly softened
- 1 t. Worcestershire sauce
- salt and freshly ground black pepper, to taste
- Herb Butter:
- 2 sticks unsalted butter, at room temperature
- 1/4 c. fresh herbs, chopped (basil, chives or cilantro)
- 1 t. salt
- freshly ground black pepper, to taste
- Lime Butter:
- 2 sticks unsalted butter, at room temperature
- 1 small lime
- 3 T. fresh cilantro
- 1 t. salt
- freshly ground black pepper, to taste
- freshly grated Parmesan cheese, optional
Steps
- Preheat oven to 350 degrees.
- Place corn in husks directly on the oven rack; roast 40 minutes, or until kernels are tender.
- When corn is done, remove from oven, cool slightly, and peel down the husks to use as handles for eating.
