Description
In about 1 hour, you can serve these wonderful sliced baked potatoes, loaded with cheese and bacon, seasoned with salt, pepper and red pepper flakes and garnished with freshly chopped parsley.
Ingredients
- 2 lb. small new potatoes
- 2 T. unsalted butter
- salt, to taste
- freshly ground black pepper, to taste
- 10 strips bacon, cut in pieces and fried until crisp
- 1 c. grated Mozzarella or Monterrey cheese
- 1 t. red pepper flakes
- 2 T. freshly chopped parsley
Steps
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
- Scrub potatoes; dry; slice in halves; place on prepared baking sheet.
- Put butter in a small bowl; melt in microwave for 20 seconds or more until it becomes liquid.
