Make your own Asian restaurant style Ginger Dressing at home. Serve it on an iceberg lettuce salad.
Ingredients
- Dressing:
- 1/4 c. onion, chopped
- 1/4 c. peanut oil
- 2 T. rice wine vinegar
- 2 T. water
- 1 T. freshly ginger, chopped
- 1 T. celery, chopped
- 1 T. soy sauce
- 1 1/2 t. tomato paste
- 1 1/2 t. sugar
- 1 t. freshly squeezed lemon juice
- dash salt
- dash pepper
- Salad:
- 9 c. iceberg lettuce, chopped
- 1 1/2 c. cucumber, halved lengthwise and thinly sliced
- 3/4 c. carrot, shredded
- 3/4 c. celery, chopped
- 1/3 c. onion, chopped
- 12 cherry tomatoes, halved
Steps
- To prepare dressing, combine ingredients in blender; process until smooth.
- Assemble salad ingredients together.
- Serve with dressing.
