Make your own Asian restaurant style Ginger Dressing at home. Serve it on an iceberg lettuce salad.
Dressing:
1/4 c. onion, chopped
1/4 c. peanut oil
2 T. rice wine vinegar
2 T. water
1 T. freshly ginger, chopped
1 T. celery, chopped
1 T. soy sauce
1 1/2 t. tomato paste
1 1/2 t. sugar
1 t. freshly squeezed lemon juice
dash salt
dash pepper
Salad:
9 c. iceberg lettuce, chopped
1 1/2 c. cucumber, halved lengthwise and thinly sliced
3/4 c. carrot, shredded
3/4 c. celery, chopped
1/3 c. onion, chopped
12 cherry tomatoes, halved
To prepare dressing, combine ingredients in blender; process until smooth.
Assemble salad ingredients together.
Serve with dressing.
