Basil and Chicken Pasta
16 oz pkg. spinach linguine or spaghetti
1 1/2 lb. boneless, skinless chicken breasts
sun dried tomatoes
1 can quartered artichoke hearts
1 can medium black olives
2 T butter
3 cloves garlic, minced
1/2 t ground black pepper
3 t dried basil
2 c heavy whipping cream
1/2 c grated Parmesan cheese
Cook pasta and drain.
In large skillet, melt butter and add big chunks of chicken and garlic. Sauté.
Stir in pepper, basil, cream, tomatoes, and cheese.
Bring to boil.
Add artichokes and black olives.
Simmer 3-4 minutes.
Toss pasta with basil sauce and serve.
