1 lb. ground pork, ground turkey, or ground beef
salt, to taste
1 oz. package taco seasoning mix
2- 15 oz. cans black beans, drained, rinsed
14.5 oz. can diced tomatoes
3/4 c-1 c. barbecue sauce
1 c. (4 oz.) shredded sharp Cheddar cheese
Preheat oven to 350 degrees. Spray a 13 x 9 inch or a 3 quart baking dish with non-stick cooking spray.
In a 12 inch non-stick skillet, cook pork with salt to taste over medium-high heat, stirring frequently, until no longer pink. Drain and discard grease; wipe out skillet with paper towels; return pork to skillet.
Add remaining ingredients except for the cheese; stir to combine. Spread in the prepared baking dish. Cover baking dish with foil.
Bake 30 - 35 minutes or until instant-read thermometer inserted in center of casserole reads 165 degrees. Top with cheese; recover with foil; let rest at room temperature for about 5 minutes or until cheese melts.
Serve over mashed potatoes, pasta or rice if desired, with favorite barbecue additions: slaw, sliced green onions or buns.
8 servings.
**This dish could also be served alone with tortilla chips or Fritos scoops for dipping.
