If you are needing a delicious dish to serve a crowd, or to bring for a potluck dinner, this would be the perfect one to make. It could also be made in 2 separate pans, one to serve now and one to freeze for later.
4 c. cooked, chopped chicken or 1 whole rotisserie chicken
12 oz. spaghetti, cooked and drained
2 cans cream of chicken soup
1/4 c. chicken stock or broth
16 oz. sour cream
1 stick butter, melted (or less, if desired)
1/4 t. cayenne pepper
1/8 - 1/4 c. dried parsley
1 T. minced garlic
1/2 t. salt
1/4 t. ground pepper
1 t. Italian seasoning
1/2 c. Parmesan cheese
1 1/2 - 2 c. shredded sharp Cheddar cheese
1 c. Italian breadcrumbs or crushed Ritz crackers
Preheat oven to 350 degrees. Grease a 9 x 13 inch baking dish or two 9 x 9 inch dishes.
Combine first 13 ingredients; spread into prepared dish; top with Cheddar cheese and breadcrumbs or crushed crackers.
Bake uncovered for 45-60 minutes, until bubbly.
Serve immediately.
