Cheesy Stuffing Casserole

Description

Thanksgiving isn't the only time of year to make stuffing. This one is easily made with store bought packaged stuffing mix, frozen veggies, cream of chicken soup and cheese. It's quick enough to make often and so delicious.

Ingredients

6 oz. box stuffing mix, chicken or turkey
12 oz. bag frozen broccoli
10 oz. bag frozen corn
10 oz.)can condensed cream of chicken soup
salt, to taste
black pepper, to taste
8 oz. Velveeta cheese, cubed or 1 c. freshly grated Cheddar cheese

Preheat oven to 350 degrees. Grease a 9 x1 3 inch baking/casserole dish with non-stick cooking spray; set aside.

Prepare stuffing mix according to package directions.

Pour frozen broccoli and corn in the prepared baking dish; pour cream of chicken soup over the vegetables; stir to combine; season with salt and pepper. Dot the top of vegetables evenly with the cubed or grated cheese. Place prepared stuffing evenly over the top. Cover tightly with aluminum foil.

Bake 35 - 40 minutes.

Remove from oven; carefully remove the hot aluminum foil. Let stand a few minutes before serving.

6-8 servings.
