Bacon makes just about everything better. This salad is great without it with the avocado, strawberries, kale and poppyseed dressing, but it is fantastic with the bacon. Feel free to add even more bacon if you desire.
6 c. pre-washed baby kale
2 c. sliced strawberries
1 ripe avocado, sliced
Dressing:
2-4 slices bacon
1/2 c. mayonnaise
2 T. sugar
2 T. white vinegar
1/2 t. poppy seeds
salt, to taste
black pepper, to taste
Place kale, strawberries and avocado into a large bowl; set aside.
Dressing:
Fry bacon until crisp. Remove bacon from skillet and place on a paper towel lined plate; cool. Crumble into small pieces; whisk together with remaining ingredients.
Drizzle dressing over salad. Serve.
