Serve these roll-ups for breakfast, brunch, or dinner or even as a snack or an appetizer. They are easy to make and can be made in a jiffy.
Ingredients
- 10 eggs
- 2 t. garlic powder
- kosher salt
- freshly ground black pepper
- 2 T. butter
- 1 1/2 c. shredded Cheddar cheese
- 1 c. baby spinach
- 1 c. chopped tomatoes
- 20 ham slices
Steps
- Preheat broiler.
- In a large bowl, crack eggs; whisk them together with garlic powder, salt and pepper.
- In a large non-stick skillet over medium heat, melt butter; add eggs; scramble, stirring occasionally, 3 minutes. Stir in cheese until melted; stir in baby spinach and tomatoes until combined.
