Description
Make a healthy, quick salad that is easy to prepare and so delicious too. Serve it for your next gathering, picnic or take on your next camping trip.
Ingredients
- Salad:
- 2 - 15 oz. cans chickpeas, drained and rinsed (good quality for better flavor)
- 1/4 c. freshly chopped Italian parsley
- 2/3 c. chopped bell pepper (mix of red, yellow and orange)
- 3/4 c. halved grape tomatoes
- 3 green onions, sliced
- 12 Kalamata olives, sliced in half
- 1/3 c. crumbled feta cheese
- Dressing:
- 4 T. extra-virgin olive oil
- 2 T. plain yogurt
- 1 T. freshly squeezed lemon juice
- 1 T. red wine vinegar
- 1 small garlic clove, minced
- 1/4 t. cumin
- salt and pepper, to taste
Steps
- In a large bowl, toss together all salad ingredients.
- In another bowl, whisk together all dressing ingredients.
- Drizzle the dressing over the salad; toss. Transfer to a serving bowl; drizzle juices on top. Refrigerate until ready to serve.
