- 1/2 c. Cheddar cheese
- 1/2 c. Parmesan cheese
- 3 green onions, chopped
- 1/2 t. garlic powder
- 1/4 c. all-purpose flour
- 2 eggs, beaten
- 1 t. salt
- freshly ground black pepper
- 1/4 c. oil, for frying
- Dipping sauce:
- 1/2 c. sour cream
- 1 T. chili garlic sauce (in the Asian section of the grocery store)
Steps
- Wash and dry the potatoes. Use the large holes of the grater to grate potatoes and cheese. Transfer the potatoes into a kitchen towel; squeeze out as much liquid as possible.
- Place grated potatoes in a large bowl; add cheeses, onion, garlic powder, flour, eggs, salt and pepper. Stir to combine.
- Heat oil in a large skillet over medium high heat. Use an ice cream scoop to measure equal amounts of potato mixture; add to the pan; use the back of a spoon to flatten out the patties. Cook about 3 or 4 patties at a time, until browned, about 4 minutes per side. Repeat with remaining potato mixture.
