Description
Make mashed potatoes easy with this great mashed potato bake. It's the perfect dish to take to a potluck or make ahead to serve for a special occasion. They are yummy, cheesy and so good. Just be sure to make enough for seconds.
Ingredients
- butter or non-stick cooking spray
- 4 lb. potatoes (Russet or gold potatoes are best)
- 1/2 c. sour cream
- 3/4 c. milk
- 1/4 c. (1/2 stick) butter, melted
- 1 c. shredded Cheddar cheese
- 1 c. shredded Mozzarella cheese
- 1 c. shredded Parmesan, divided
- Kosher salt, to taste
- freshly ground black pepper, to taste
- 1/2 c. plain breadcrumbs or panko breadcrumbs
Steps
- Preheat oven to 400 degrees. Grease 9 x 13 inch casserole dish with butter or non-stick cooking spray.
- Wash and peel potatoes; cut into 1 inch pieces. Cook potatoes in a large pot of well salted boiling water until soft and tender, about 10-15 minutes, depending on the size and type of potato. Drain potatoes; place in a large bowl or place back into the same pot. Add sour cream, milk and melted butter. Mash potatoes to desired texture.
- Mix in Cheddar and Mozzarella cheeses and 3/4 c. Parmesan, reserving about 1/4 c. Parmesan for topping. Season with salt and pepper, to taste.
