Description
This super simple salad perfect to serve at a weeknight dinner or for a gathering of friends and family. It's quick to prepare and is healthy and delicious, as well.
Ingredients
- 2 c. red cherry tomatoes, sliced in halves
- 2 c. orange cherry tomatoes, sliced in halves
- 1 large Hass avocado, peeled and sliced
- 1 cucumber, peeled and chopped
- 1/2 c. finely chopped fresh parsley
- 2 T. apple cider vinegar
- freshly squeezed juice of 1 large lime
- salt and pepper, to taste
Steps
- Mix all ingredients in a bowl.
- You can serve right away, or you an let it sit about 30 minutes to marinate.
- 10 servings.
