Roasted Mushrooms with Herbs

Description

Start with a mixture of fresh mushrooms, add a few simple, basic ingredients and you wind up with a wonderful meatless dish.

Ingredients

  • 2 lb. mixed fresh mushrooms (button, shiitake, cremini, baby portobello)
  • 2 garlic cloves, chopped
  • 1/2 c. olive oil
  • salt and pepper
  • 1 t. chopped fresh rosemary
  • 1 t. chopped fresh sage
  • 1/4 c. chopped fresh parsley
  • 1 t. balsamic vinegar

Steps

  1. Preheat oven to 350 degrees.
  2. Wipe off mushrooms with a clean, damp cloth; trim/discard stems. Slice mushrooms into pieces no larger than 2 inches in size.
  3. In a large baking dish, mix olive oil with garlic, herbs and seasonings. Add mushrooms; mix well, coating mushrooms with the flavored oil.
