Ritz Cracker and Grape Jelly Icebox Cake

Well, this is not really a cake, but who cares? It's an old-fashioned no-bake dessert with only 3 ingredients. It's super fun to make and simple too.

Ingredients

1 1/2 c. grape jelly
2 - 8 oz. containers original Cool Whip, thawed
133 Ritz Crackers (almost 5 sleeves)

Microwave grape jelly in 30 second intervals until smooth and liquid. Pour into a large mixing bowl. Add Cool Whip to the grape jelly; mix until combined.

Spread a small amount of the grape jelly mixture in a pie plate, on a plate or a cake stand. Arrange 19 Ritz Crackers in a circle so that they stick to the grape jelly mixture, do not overlap them. Add a layer of the grape jelly mixture on top; add another layer of 19 crackers, offset; repeat until all of the crackers and the grape jelly mixture are used; finish with the grape jelly mixture. There should be a total of 7 cracker layers.

Chill in the refrigerator for at least 4 hours, preferably overnight.

Slice; serve chilled.
