Description
Make this fantastic salad that has the 3 c's- crunchy, crispy and chewy. You can make in a day in advance to save time. It lasts for days in the refrigerator.
Ingredients
- Dressing:
- 1 c. mayonnaise
- ⅓ c. sour cream
- 1 T. cider vinegar
- 1 T. lemon juice
- 1 T. sugar
- 1 t. poppy seeds
- salt and pepper, to taste
- 8 c. broccoli, washed and chopped
- 4 green onions, sliced or ¼ c. chopped red onion
- ½ c. dried cranberries
- 1 green apple, diced
- 2 t. freshly squeezed lemon juice
- ⅓ c. chopped pecans, optional
Steps
- Combine all dressing ingredients in a small bowl; mix well. It's best to let the dressing sit for about 1 hour for all of the flavors to mix.
- Chop the apple; toss with freshly squeezed lemon juice; place in a large bowl with remaining ingredients. Toss with dressing until well mixed. Refrigerate for at least 1 hour before serving.
- 12 servings.
