Description

If you have leftover fresh cranberries, use them to make an amazingly delicious and gorgeous cranberry salsa appetizer. It will definitely be a huge hit at any party.

Ingredients

  • 12 oz. fresh cranberries
  • ¼ c. sliced green onions
  • 2 jalapeños, minced
  • ¼ c. fresh cilantro leaves, minced
  • 2 T. finely grated fresh ginger
  • 2 T. freshly squeezed lemon juice
  • ½ c. sugar
  • crackers or tortilla chips, for serving
  • Optional: a brick of cream cheese, for serving

Steps

  1. Rinse, drain and pick over cranberries, discarding any that are soft or bruised. Place cranberries in a food processor or blender; pulse until finely chopped, but not mushy.
  2. Place crushed cranberries in a bowl; mix together with green onions, jalapeños, cilantro leaves, and ginger; pour in lemon juice and sugar; stir together. Cover with plastic wrap.
  3. Refrigerate, allowing flavors to develop. It starts out a bit tart, but as it is allowed to sit it will develop even more flavor.
