Description
Make a wonderful side dish with Brussels sprouts, bacon and cheese in a lovely creamy sauce. Each serving is only 59 calories and 2 WW Smart Points. It makes a perfect side dish for company or holiday time.
Ingredients
- 1 lb. Brussels sprouts, washed, dried and quartered
- 3 T. olive oil
- salt and freshly ground pepper, to taste
- 8 slices bacon, crisply cooked and chopped
- 1 T. butter
- 1 T. olive oil
- 1 small yellow onion, diced
- 2 - 3 cloves garlic, finely chopped
- 1 c. shredded Parmesan cheese, divided
- 1 c. whipping cream
- salt and freshly ground pepper, to taste
- pinch of nutmeg, optional
Steps
- Preheat oven to 400 degrees. Line a baking pan with aluminum foil.
- In a large mixing bowl, toss Brussels sprouts with olive oil, salt and pepper; transfer to prepared baking pan.
- Bake for 15 minutes, stirring occasionally. Remove from oven; set aside.
