Description
Serve these yummy zucchini spears as an appetizer or as a side dish. They are easy to make and so delicious, they won't last long.
Ingredients
- 3 medium sized zucchini (about 1½ lb.)
- 1 T. olive oil
- 1 T. freshly squeezed lemon juice
- 2 t. grated/zested lemon peel
- 1 garlic clove, minced
- ½ t. oregano
- 2 T. grated Parmesan cheese
- 1 T. shredded Parmesan cheese
- salt and pepper, to taste
Steps
- Preheat oven to 350 degrees. Line a baking sheet with aluminum foil; spray with cooking spray.
- Cut zucchini lengthwise into quarters, then cut in half widthwise.
- Lay the zucchini spears on the prepared baking sheet; sprinkle with salt and pepper.
