You can serve this easy spaghetti as the main dish or as a side dish. It's simple and quick to make when you are in a hurry. Add veggies or meat if you wish. Serve with a crusty bread and a side salad.
1 lb. spaghetti
2 T. salt
¼ c. plus 2 T. extra-virgin olive oil
8 garlic cloves, minced
½ t. red pepper flakes
2 t. freshly squeezed lemon juice
3 T. finely chopped fresh parsley
Bring a large pot of water to a boil; add in 2 T. salt to the water. Cook spaghetti according to package directions. Drain.
Meanwhile, in a small saucepan, pour in ¼ c. olive oil; heat over low heat for 1 minute; add in garlic and red pepper flakes; stir; cook 1 minute. Remove from heat.
Pour olive oil mixture over the cooked and drained spaghetti. Add in additional 2 T. olive oil. Pour in lemon juice and parsley; toss until pasta is coated.
Serve.
4-6 servings.
