Description
You can serve this easy spaghetti as the main dish or as a side dish. It's simple and quick to make when you are in a hurry. Add veggies or meat if you wish. Serve with a crusty bread and a side salad.
Ingredients
- 1 lb. spaghetti
- 2 T. salt
- ¼ c. plus 2 T. extra-virgin olive oil
- 8 garlic cloves, minced
- ½ t. red pepper flakes
- 2 t. freshly squeezed lemon juice
- 3 T. finely chopped fresh parsley
Steps
- Bring a large pot of water to a boil; add in 2 T. salt to the water. Cook spaghetti according to package directions. Drain.
- Meanwhile, in a small saucepan, pour in ¼ c. olive oil; heat over low heat for 1 minute; add in garlic and red pepper flakes; stir; cook 1 minute. Remove from heat.
- Pour olive oil mixture over the cooked and drained spaghetti. Add in additional 2 T. olive oil. Pour in lemon juice and parsley; toss until pasta is coated.
