Enjoy this phenomenal, easy salad that goes well with just about any main dish. It will become one of your favorite go to salad recipes, especially in the warm summer months.
1 lb. bacon, cooked, drained and crumbled
2 lb. frozen peas, thawed in the refrigerator overnight
3/4 c. coarsely grated sharp Cheddar cheese
1/2 small red onion peeled, finely chopped
1/2 c. mayonnaise
1/2 t. kosher salt
1/2 t. freshly ground black pepper
1/4 t. paprika
Stir together all ingredients.
Serve immediately, or place in a tightly covered container in the refrigerator for 1 hour to 3 days to give the flavors a chance to marry.
Stir gently from top to bottom before serving.
