Oatmeal is a wonderful breakfast dish to serve to your loved ones. This baked oatmeal is sweetened with honey and loaded with fresh berries. It is truly incredible.
3 1/2 c. old fashioned oats
2 t. baking powder
1 t. kosher salt
3/4 t. ground cinnamon
1/2 t. ground ginger
1/4 c. melted butter
1/3 c. honey
3 eggs
1 1/4 c. milk
3/4 c. chopped strawberries about 1/4" - 1/2" pieces
1/2 c. raspberries
1/2 c. blueberries
1/2 c. sliced almonds, if desired
Preheat oven to 350 degrees. Grease a 9 x 13 baking pan with butter.
Stir together oats, baking powder, salt, cinnamon and ginger in a large mixing bowl.
Pour the butter and honey over the oats; stir to coat; stir in eggs; add milk; gently fold in the berries; add almonds, if desired. Pour into the prepared pan. Bake for 25-30 minutes, until a knife inserted in center comes out clean. Let cool about 10 minutes.
Serve.
6-8 servings.
Freezer:
Let the oatmeal cool completely; cut into portions. Store in airtight freezer bags or containers. Reheat in the microwave with 1 T. water.
