Description

Although the Amish don't use electricity and these do, these cookies are an adaptation of their recipe. Their recipe has been around since the 1700's, which proves are really good they are.

Ingredients

  • 4 1/2 c. all-purpose flour
  • 1 t. baking soda
  • 1 t. cream of tartar
  • 1 c. butter, softened
  • 1 c. vegetable oil
  • 1 c. sugar
  • 1 c. powdered sugar
  • 2 large eggs, at room temperature
  • 1 t. vanilla extract

Steps

  1. Preheat oven to 375 degrees. Line a baking/cookie sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda and cream of tartar; set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, cream together butter, oil and sugars on medium-high speed until light and fluffy, scraping sides as necessary. Reduce speed to medium; add eggs, one at a time, mixing just until combined. Add vanilla; mix until combined. Reduce speed to low; add flour in three additions, scraping down sides as necessary. (A hand mixer could also be used.)
