Description
This fresh and pretty salad will delight family and guests alike. It's full of crunchy ingredients like carrots, broccoli, onions, cranberries and chopped pecans, tossed with a tangy and light dressing.
Ingredients
- Dressing:
- 1/4 c. mayonnaise
- 1 T. freshly squeezed lemon juice
- 2 t. sugar
- 1/2 t. kosher salt
- 12 oz. broccoli stalk grated or sliced thinly into 2-3" matchsticks, (5 c.) from 2 large broccoli stalks*
- 1 large carrot, grated or sliced very thinly into 2 inch matchsticks
- 1/2 small red onion, sliced as thinly as possible
- 3/4 c. sweet dried cranberries
- 1/2 c. chopped pecans
Steps
- Whisk together dressing ingredients in a large mixing bowl. Add salad ingredients; stir to coat. Refrigerate for at least 1 hour before serving.
- 6-8 servings.
- *Substitute with bagged grated broccoli stalks.
