Description
These potatoes are so good, they can be served for special occasions but are so easy to make, you can serve them for weeknight dinners too.
Ingredients
- 1 T. oil
- 1 c. Parmigiano-Reggiano or Parmesan cheese, grated
- 1 T. oil
- 1 1/2 lb. small (1 - 1 1/2 inch diameter) potatoes, cut in half
- salt and pepper, to taste*
Steps
- Preheat oven to 400 degrees.
- Brush oil on the bottom of a baking dish; sprinkle the cheese on the bottom of the dish.
- Toss potatoes in 1 T. oil; season with salt and pepper; press into the cheese in the baking dish with the cut sides down.
