Now you can make the traditional side dish in the slow cooker. It's perfect for holiday meals when oven space is limited. It's easy to throw together and is delicious. It definitely won't disappoint. It can be made totally vegetarian if desired, just use
6 oz. box cornbread stuffing
1 1/2 c. chicken stock/broth (or water)
12 oz. bag frozen broccoli florets or cuts, thawed
10.5 oz. can cream of mushroom, cream of celery or cream of chicken soup
8 oz. - 16 oz. Velveeta cheese, cubed
Place a slow cooker liner in the base of a 4-6 quart slow cooker for easy clean up since the cheese in this dish will stick a bit. Spray the liner with non-stick cooking spray.
Mix together stuffing and stock/broth or water; microwave for 3 minutes. Pour into the slow cooker; add remaining ingredients; stir well. Cover; cook on Low for 2-3 hours until cheese melts and broccoli is tender.
6-8 servings.
