Description
These delicious potatoes make a fantastic side dish to go along with just about any entree. They are crisply roasted in your oven with garlic, Parmesan cheese, olive oil, lemon juice and fresh thyme.
Ingredients
- 5 white potatoes, scrubbed and cut into wedges
- 1/2 c. Parmesan cheese
- 2 cloves garlic, minced
- 1/3 c. extra virgin olive oil
- 2 T. freshly squeezed lemon juice
- 2 sprigs thyme, leaves only (or about 1/2 t. dried thyme)
- salt and pepper, to taste
Steps
- Preheat oven to 325 degrees.
- Spread wedged potatoes in a well greased 9×13 inch baking pan.
- In a bowl, whisk together the remaining ingredients; pour over the potatoes.
