Description
There are times when you just need an easy, quick to prepare salad that is healthy, delicious and versatile. This one is the one. It can be served as a salad, in a wrap, as a side dish or a meat topping.
Ingredients
- 15 oz. can black beans, rinsed and drained
- 15 oz. can chickpeas/garbanzo beans, drained
- 15 oz. can diced tomatoes, undrained
- 15 oz. can corn, drained
- 4 oz. can diced green chiles
- 1 red onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 jalapeño pepper, diced, optional
- 1/4 c. chopped fresh cilantro or chopped celery leaves
- freshly squeezed juice from 2 limes
- 1/4 c. olive oil
- salt and pepper, to taste
- avocado slices, for garnish
Steps
- Combine all ingredients except for the avocado in a large bowl; mix well; cover; refrigerate until ready to serve.
- Garnish with avocado slices just before serving.
- 10 servings.
