Transform boring green beans into a casserole that is so delicious and packed with so much flavor you can serve it at holiday meals but easy enough to serve anytime.
Ingredients
- 1 1/2 lb. fresh French green beans, halved, ends removed (or 2 cans green beans, rinsed and drained)
- 10 oz. mozzarella cheese, grated
- 1 c. sour cream
- 1/4 white onion, finely chopped
- 3 T. unsalted butter
- 2 T. all-purpose flour
- 1/2 t. garlic powder
- kosher salt, to taste
- freshly ground pepper, to taste
Steps
- Preheat oven to 400 degrees. Set up a large bowl of ice water next to the workstation.
- Bring a large pot of well salted water to a boil; add green beans; cook 4-6 minutes, or until bright green and tender-crisp. Transfer green beans to the ice bath to stop from cooking; drain; place in a large 11x7 baking dish.
- Melt butter in a medium skillet over medium heat; saute onion until softened, about 4 minutes. Stir in flour and garlic powder; cook for 1 minute, stirring until smooth. Season with salt and pepper, to taste. Mix in sour cream; cook until mixture just begins to boil.
