Make your own chocolate covered peanut butter sandwich cookies that are sweet and salty. No baking is required, just melt the chocolate in your microwave and in just a few minutes, you'll have a dessert that's rivals store bought sandwich cookies.
48 Ritz crackers
3/4 c. creamy peanut butter
16 oz. semi-sweet chocolate chips
Line a baking sheet with parchment or waxed paper.
Place 24 crackers on the prepared baking sheet. Top each cracker with about 1/2 T. peanut butter; top with another cracker.
Place chocolate chips in a glass bowl; place in the microwave. Microwave for 90 seconds; stir well; microwave in 30 second intervals until melted, as needed. Stir to fully melt the chocolate each time.
Dip each cookie sandwich into the chocolate, using 2 forks to drain the excess chocolate off of the cookies. Place the coated cookies back on the baking sheet. Place the chocolate coated cookies in the refrigerator until firm.
Transfer the chilled cookies to an airtight container; store in the refrigerator.
