Summer is the time to make salads from fresh ingredients. This peach salad will become one of your go to recipes. If you want, add some grilled chicken for a bit of protein.
Salad:
4 ripe peaches, peeled, pitted and diced
1 c. fresh blueberries
2 avocados, peeled, pitted and diced
1/2 red onion, thinly sliced
1 c. chopped pecans
1/4 c. fresh mint leaves, chopped
8 oz. mini mozzarella balls
4 c. chopped romaine lettuce
Balsamic Vinaigrette:
3 T. white balsamic vinegar
1/3 c. olive oil
2 t. Dijon mustard
1/2 t. onion powder
1/2 t. sugar
Salad:
In a large bowl, toss peaches, blueberries, avocado, red onion, pecans, mint, mozzarella balls and chopped romaine lettuce together.
Balsamic Vinaigrette:
In a small bowl, whisk balsamic, olive oil, Dijon mustard, onion powder and sugar until well combined.
Drizzle balsamic vinaigrette over salad right before serving then toss to coat.
