Take this super easy salad to your next gathering. It's refreshing, tasty and light and delicious.
1 pint red cherry or grape tomatoes, halved
1 pint yellow cherry or grape tomatoes, halved
2 large avocados, pealed, pitted and diced
8 oz. mini-mozzarella balls
1/2 c. fresh basil, chiffonade
3 T. honey
3 T. white balsamic vinegar
3 T. extra virgin olive oil
1/4 t. salt
1/4 t. freshly ground black pepper
In a large bowl, toss together red and yellow tomatoes, avocado, mozzarella and basil.
Dressing:
In another small microwave-safe bowl, heat honey for 15-20 seconds in the microwave to thin out; whisk together with vinegar and olive oil.
Pour dressing over tomatoes and basil; season with salt and pepper, to taste; toss to combine.
