Description

This beautiful cake is a southern staple. It's great at parties, picnics and get togethers. It's moist and fluffy and has a delicious cherry flavor.

Ingredients

• Cake:
• 2 c. flour
• 2 c. sugar
• 3/4 c. cocoa powder
• 1 t. baking soda
• ½ t. baking powder
• ½ t. kosher salt
• 1 c. plus 3 T. Cherry Coke soda
• ½ c. canola oil
• 1 c. sour cream
• 2 large eggs
• 2 t. pure vanilla extract
• ¼ c. Maraschino cherry juice
• Cherry Frosting:
• 3 c. unsalted butter, softened
• 6 c. powdered sugar
• 5 T. heavy whipping cream
• 1 t. cherry extract
• ¼ c. Maraschino cherry juice
• 2 drops pink gel food coloring
• 1 c. stemless Maraschino cherries, dried, cut in half
• 1 small jar Maraschino cherries with stems, for topping
• Chocolate Ganache:
• 1 c. semi-sweet chocolate chips
• 1/2 c. heavy whipping cream

Steps

1. Preheat oven to 350 degrees. Spray 3 cake pans with non-stick cooking baking spray.
2. Using a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt until combined.
3. In another large bowl, whisk together cherry coke, canola oil and sour cream until combined and smooth. Whisk in eggs, vanilla extract and maraschino cherry juice. Gradually pour in the wet ingredients into the dry ingredients; whisk until combined.
