Treat family and friends with layers and layers of flavor with these amazing cookie bars. They are made with everyone's favorites, chocolate, peanut butter and caramel.
Caramel Filling:
11 oz. bag vanilla caramels, unwrapped
14 oz. can sweetened condensed milk
4 T. butter
Cookie Dough:
12 T. unsalted butter
2 c. light brown sugar
1/2 c. creamy peanut butter
2 eggs, at room temperature
1 T. vanilla
2 c. flour
1 c. old fashioned oats
2 1/2 t. baking powder
1 t. salt
2 c. chocolate chips
1 c. Reese's peanut butter chips
1 c. Heath toffee bits
Preheat oven to 350 degrees. Line a 9x13 inch baking dish with parchment paper.
Place unwrapped caramels in a small saucepan with butter and sweetened condensed milk; cook over medium-low heat, stirring occasionally, until caramels have fully melted and mixture is smooth.
Cream butter and sugar together in a large mixing bow; add peanut butter; continue mixing. Add eggs 1 at a time, mixing well after each egg; add vanilla.
Combine flour, oats, baking powder and salt in a small mixing bowl. Add flour mixture slowly, stirring until well combined. Stir in chocolate chips, peanut butter chips and toffee bits.
Spread 2/3 of the dough on the bottom of prepared pan. Slowly pour caramel mixture evenly over the dough. Use a teaspoon to drop and scatter remaining dough on top.
Bake for about 30 minutes. Cool completely. Cut into 24 bars.
