Description

Lemon lovers will absolutely want to make these luscious cookies. They are soft and chewy and are sweet with just the right amount of lemon.

Ingredients

• 1 2/3 c. all-purpose flour
• 1 1/2 t. cornstarch
• 1/4 t. salt
• 1/2 t. baking soda
• 3/4 c. butter (can use salted, just cut the added salt to 1/8 tsp)
• 1/2 c. sugar
• 1/3 c. brown sugar, packed
• 2 T. lemon zest, from about 3 lemons
• 1 1/2 t. lemon extract
• 1/2 t. vanilla extract
• 1 large egg
• 1 1/3 c. white chocolate chips, reserve about 1/8 c.
• yellow food coloring, optional

Steps

1. Preheat oven to 350 degrees.
2. Zest the lemons.
3. In a small bowl, whisk together flour, cornstarch, salt and baking soda; set aside.
