Sometimes you just need to make a cake or a dessert for one. Maybe you are spending the holidays alone or you just crave an excellent dessert but don't want a whole cake. This recipe is quick, easy and delicious.
Ingredients
- 2 T. all-purpose flour
- 1/8 t. baking powder
- 3/4 T. sugar
- 1 T. pumpkin puree
- 2 T. milk
- 1/2 T. vegetable oil
- 1/8 t. cinnamon plus more for serving
- a dollop of whipped cream, if desired
Steps
- Combine all ingredients in a mug or a ramekin dish. Mix well until combined smoothly.
- Cook in microwave for 1 minute. The top of the cake should be dry; if not, microwave for a few more seconds.
- Let cake cool a few minutes. Serve with a dollop of whipped cream and a sprinkle of cinnamon, if desired.
