Description
Change up your salad routine with a salad that's delicious, healthy and light. It pairs great with just about any main dish.
Ingredients
- Salad:
- 3-4 medium tomatoes, diced
- 1 green bell pepper, seeds and membranes discarded, chopped
- 1/2 - 1 English cucumber, seeds removed, diced
- 5 green onions, white and green parts, chopped
- 1/4 c. fresh parsley, chopped
- 1 small onion, chopped (1/2 c.)
- Romaine lettuce, chopped (optional)
- Dressing:
- 1/4 c. extra virgin olive oil
- 1/4 c. freshly squeezed lemon juice
- 2 garlic cloves, minced
- 1 t. dried mint (or 1 T. chopped fresh mint)
- 1/2 t. kosher salt
- freshly ground black pepper, to taste
Steps
- In a large bowl add tomatoes, bell pepper, cucumber, green onions, parsley and onion; stir.
- Dressing:
- In a shaker or a jar, combine olive oil, lemon juice, garlic, mint, salt and pepper; close; shake dressing until combined. Pour dressing over the salad and toss to combine. Taste and adjust mint, salt and pepper.
