This dish is so simple and delicious, you'll wonder why you haven't made it sooner. You can serve it as an appetizer or as a side.
2–3 large, beefsteak tomatoes
1 c. shaved Parmesan cheese
1 T. dried basil
1 T. dried oregano
2 T. fresh Italian parsley, chopped
Preheat oven to 400 degrees. Spray a baking sheet with non-stick cooking spray.
Wash tomatoes; slice into 1/4 inch slices; place slices on the prepared baking sheet.
Top each slice with Parmesan cheese, covering the tops; sprinkle on basil and oregano.
Bake 10 minutes, until cheese is melted. Remove from oven.
Top with freshly chopped Italian parley.
Serve while hot.
