Now you can enjoy that BLT without bread with this yummy salad. It's the perfect salad or side dish for warmer weather to serve with any main dish.
4 slices thick-cut bacon, cooked and crumbled
2 c. butter or iceberg lettuce, chopped
2 c. fresh arugula, chopped
1 pint grape or cherry tomatoes, quartered
1 c. fresh sweet corn
1-2 avocados, peeled and chopped
4 oz. feta, crumbled
1 1/2 T. olive oil
freshly squeezed juice from 1 lime
1/4 T. salt
1/4 T. black pepper
Cook bacon; transfer to a paper towel lined plate; crumble or chop into pieces.
In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado. Add olive oil and lime juice; season with salt and pepper; toss to coat. Stir in bacon and feta cheese.
Serve.
