Enjoy this fresh, lemony dessert without heating up your kitchen. It will disappear so fast, you'll be amazed.
8 oz. package cream cheese, at room temperature
3.4 oz. instant vanilla pudding
3/4 c. milk
freshly squeezed juice from 1 Lemon
zest of 1 lemon (reserving a bit for garnish)
1 1/2 c. Cool Whip, divided
about 25 Vanilla Wafer Cookies
Cream Cheese Pudding Mixture:
Place cream cheese in a mixing bowl; beat for about 1 minute with an electric mixer until fluffy. Add pudding mix, milk, lemon juice and zest; beat until well combined, about 2 minutes. Add in 1/2 c. Cool Whip; beat until incorporated.
Place a layer of vanilla wafer cookies (about 10) in the bottom of a standard sized loaf pan. Spread half of the cream cheese mixture on top; place a second layer of cookies on top of the cream cheese mixture; spread on remaining cream cheese mixture.
Top with remaining Cool Whip. Garnish with reserved lemon zest.
Refrigerate for several hours or overnight to allow the cookies to soften.
