Description
Enjoy this fresh, lemony dessert without heating up your kitchen. It will disappear so fast, you'll be amazed.
Ingredients
- 8 oz. package cream cheese, at room temperature
- 3.4 oz. instant vanilla pudding
- 3/4 c. milk
- freshly squeezed juice from 1 Lemon
- zest of 1 lemon (reserving a bit for garnish)
- 1 1/2 c. Cool Whip, divided
- about 25 Vanilla Wafer Cookies
Steps
- Cream Cheese Pudding Mixture:
- Place cream cheese in a mixing bowl; beat for about 1 minute with an electric mixer until fluffy. Add pudding mix, milk, lemon juice and zest; beat until well combined, about 2 minutes. Add in 1/2 c. Cool Whip; beat until incorporated.
- Place a layer of vanilla wafer cookies (about 10) in the bottom of a standard sized loaf pan. Spread half of the cream cheese mixture on top; place a second layer of cookies on top of the cream cheese mixture; spread on remaining cream cheese mixture.
