Easy, quick and delicious describes this vegetarian side dish.
5 large sweet onions, peeled, halved and thinly sliced (Vidalia onions)
1/2 c. butter
1/2 c. crushed butter-flavored crackers (from about 12 crackers) (Ritz crackers)
1/2 c. grated Parmesan cheese
Preheat oven to 350 degrees. Grease a 2 quart baking dish.
In a large skillet, saute onions in butter until tender. Place half of the onions in the prepared baking dish; sprinkle on half of the cracker crumbs and cheese. Repeat layers.
Bake, uncovered, until golden brown and bubbly, 25-30 minutes.
