Turn your plain rice into a delicious side with just a bit of chicken broth, Italian seasoning, spinach and cheese. It'll be on your table in no time.
1 3/4 c. chicken both
1 t. Italian seasoning, crushed
3/4 c. uncooked long-grain white rice
1 c. chopped fresh spinach
1/2 c. grated Parmesan cheese, plus more for serving
Heat the broth and Italian seasoning together in a 2 quart saucepan over medium-high heat; bring to a boil.
Stir in the rice and spinach; reduce heat to low. Cover; cook for 20 minutes or until rice is tender. Stir in the Parmesan cheese.
Serve with additional cheese, if desired.
