Get out of your cooking rut and make something new. This casserole is full of the tasty and yummy goodness of ground beef, potatoes, cheese, eggs and onions.
3 T. olive oil
1 1/2 lb. potatoes, peeled and diced
1 1/2 lb. ground beef
1 white onion, chopped
8 eggs, lightly beaten
2 c. Cheddar cheese, grated
1 c. milk or heavy cream
1 t. garlic powder
3/4 t. dried parsley
kosher salt and freshly ground black pepper, to taste
Preheat oven to 350 degrees F. Lightly grease a 9 × 13 inch baking dish with non-stick cooking spray.
Heat oil in a large skillet over medium-high heat. Saute potatoes until tender, about 10-15 minutes. Transfer potatoes to a bowl; set aside.
Add ground beef and onions to the skillet; cook until meat is browned and onions are tender. Discard fat from skillet. Season with garlic powder, parsley, salt and pepper. Transfer beef and onions to the bowl with the potatoes; stir.
Pour beef, onions and potatoes into the prepared baking dish.
In another bowl, whisk together milk and eggs; stir in cheese. Pour mixture over beef and potatoes; stir.
Bake for 20 minutes, or until eggs are cooked and everything is warmed through.
Serve hot.
6-8 servings.
