This zesty pasta salad with tortellini, bacon and fresh vegetables will become one of your favorite side dishes. It could also be served as a main dish.
20 oz. package refrigerated tortellini, your favorite
1 pint cherry tomatoes, halved
2 medium zucchini, diced
1 large cucumber, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 large red onion, diced
6 slices bacon, cooked and crumbled
Dressing:
1 c. Italian salad dressing, your favorite
1/4 - 1/2 c. grated Parmesan cheese
1 T. sesame seeds
1 t. paprika
1/2 t. celery seed
1/4 t. garlic powder
Cook pasta according to package directions, about 4-6 minutes; drain; rinse in cold water; drain again.
Add tomatoes, zucchini, cucumber, bell peppers, onion, and bacon to a large bowl.
Dressing: Whisk together salad dressing, cheese, sesame and celery seeds, paprika, and garlic powder.
Pour dressing over salad; toss until coated. Cover.
Refrigerate for 3 hours or overnight.
Serve garnished with more cheese, if desired.
